Not much experience with open pit, whole animal cooking. BUT, when we built my old trapping partner log cabin he celebrated by spitting a goat over an open fire, it was outstanding, he had tortillas, beans and homemade hot sauces.
One of the neighbor ladies asked how he decided which goat to kill. He didn't blink an eye and said " Easy, I'm roasting Loretta, she looked like my Ex-wife".
